We set up dining tables in the music pavillion beside our kitchen construction. There we were joined by Benedikte Koldingsnes of Vegan pop up cafe. She spoke about her experimentation with food and materials, and her search for biodegradable materials to use in packaging. We encouraged her to try a new experiment with dinner that she had never done before, and she made us blue noodles that turned pink when lemon juice was added (dyed blue with red cabbage in the water).
